Camp Oven Cooking
CHARLEVILLE HISTORIC HOUSE

Popular camp oven cook of the Charleville area is Mr. Ted Connolly. Ted who is now retired, has spent a lifetime of knocking around the west and building up a great collection of camp ovens and associated equipment. This array of camp ovens is set up in the rear grounds of Historic House, under the coolibah tree. The occassion was a camp oven dinner, where Ted, and his helpers were called on to cater for about 200 people. Preparation work for a function such as this has to start early in the morning, when all the holes and coals are prepared for the camp ovens and the menu is allowed to slowly simmer, with coals being placed underneath and on top of each oven. This type of cooking is held quite regularly at the Historic House.
