2 very ripe bananas ¾ cup chopped dates
1 cup brown sugar ½ cup coconut ½ cup
1 cup plain flour
Beat butter and sugar until light
and fluffy, add egg and banana, beat well.
Stir in flours and dates.
Spread mixture into a greased lamington tin and bake in moderate
oven 30 mins.
Ice with caramel icing when cool.
1 cup chopped dates
1 tablespoon flour
2 tablespoons butter
1 cup milk ½ cup sugar
salt & squeeze lemon Juice
Put flour, salt, butter and milk into a pan, bring to boil,
Add sugar, dates and lemon juice.
Simmer for 5 mins.
Add well beaten eggs and mix well.
Put into a baked pastry case and bake in a moderate oven.
Serve hot or cold.
Date & Banana Dessert
250g stoned dates
1 cup cream ¼ cup milk
Arrange alternate layers of
thinly sliced bananas and halved dates in serving bowl.
Combine the cream and milk and pour over the fruit.
Cover and chill for several hours before serving. Serves 6
1/2kg chopped dates
1 cup water
1 dessertspoon coffee powder
1 small cup brown sugar
Boil the above ingredients
Add 1 beaten egg, then 2 cups wholemeal SR flour or 1 cup
SR flour and 1 cup plain flour.
Line cake tin with foil and bake in moderate oven 30 mins
